Corn & Summer Veggie Saute Over Creamy Herbed Polenta

Last night we had the most delicious Garnish & Gather meal!  This was my first time making polenta, and I was surprised how easy it was!  The meal was easy, healthy and delicious.  You should try it this week. :)  Feeds 2.  Takes about 40 minutes.

Ingredients 

  • 2 Cups Zucchini
  • 1/2 Cup Polenta
  • 1 Lemon
  • 2 Tablespoons Fresh Parsley
  • 2 Tablespoons Fresh Chives
  • 1/4 Cup Cream
  • 1/2 Cup Onion
  • 4 Cloves Garlic
  • 1 Ear of Corn
  • 3 Oz Green Beans
  • 1/2 Bell Pepper
  • 1 Cup Tomato
  • Butter

Steps

  1. Boil Water and Prep Veggies
    1. Boil 2 cups of water in a sauce pot for polenta
    2. Dice Bell Peppers
    3. Remove Kernels from Corn Cob
    4. Dice Tomato
    5. Dice Zucchini
    6. Trim Ends and Slice Green beans into 1/2 inch segments
    7. Dice Onion
  2.  Cook Polent
    1. Add Polenta to boiling Water while whisking
    2. Simmer for 18-20 Minutes, until water is absorbed
  3. Cook Veggies
    1. elt 2 Tbsp butter over medium heat in a lauge saute pan
    2. Add Onions and garlic and bell pepper and cook 5 minutes, stirring often
    3. Zest Lemon
    4. Chop herbs and divide in half
    5. Add tomatoes, zucchini, corn and green beans to saute pan and cook 8-10 minutes, until tender
  4. Finish Polenta and Veggies
    1. Just before serving, add 1 Tbsp butter, cream, lemon zest and half the herbs to the polenta
    2. Remove veggies from heat and toss with the other half of the herbs 

Plate meal by scooping the polenta on the plate and topping with sauteed veggies. :)
